Court's Dessert



When I left school for a summer vacation for the very first time ever, I cried, because at 7 years old I loved school and my schoolteacher, and the prospect of not seeing her for a whole summer felt so horrible.

My best friend's mother invited me home with them to have this dessert in an effort to cheer me up. Ever since, it's been sort of a comfort food for me, only now I eat it because it's so damn good.

It's easy to make and can be varied ad infinitum.

For 1 person you need:

Vanilla ice cream
Whipped double cream
Meringue shells
Sliced bananas
Chocolate sauce (chose your favourite brand or make your own)
Sprinkles


Place 2-3 scoops of your favourite vanilla ice cream in a large bowl. Layer meringue shells, chocolate sauce, whipped cream and sliced bananas over it. Top up with sprinkles.

If you want to you can add blueberries, strawberries or raspberries to the mix. Chocolate wafers go well with it, and you can substitute the chocolate sauce for caramel sauce if you prefer.

This is a perfect dish to serve at a kid's party. Just place all the ingredients in nice bowls on a large buffet table and let everyone make their own plate.
